Step by step

  1. 1

Grind and fill the basket(Step 1)

Grind 18 g of coffee (3-cup pot) at medium-fine — finer than filter, coarser than espresso. If you can't weigh it, fill the basket level and don't tamp; a heaped basket chokes the pot and a tamped puck over-extracts. For a 6-cup pot use ~30 g.

  2. 2

Fill the boiler with hot water(Step 2)

Fill the bottom chamber with just-off-boil water up to the safety valve. Starting hot shortens the time the grounds spend heating on the stove, which is the single biggest fix for bitter, metallic moka coffee.

  3. 3

Assemble and brew on low heat(Step 3)

Seat the basket, screw the top on (use a cloth — it's hot), and put the lid down. Set the burner to low with the handle clear of the flame. Slow extraction tastes sweeter; high heat blasts the coffee with superheated steam.

  4. 4

Listen for the gurgle, then cool it(Step 4)

When the pot starts to sputter and gurgle (not just flow), coffee is done and steam is pushing through. Kill the heat immediately and run the base under cold tap water to stop the extraction. Pour right away.

Barista tips

  • The classic fill line is 'up to the valve' — that's roughly a 1:10 coffee-to-water ratio by yield.
  • Bitter or metallic? Start with hotter starting water and lower heat before blaming the beans.
  • Moka coffee is a concentrate: many drinkers top it 50/50 with hot water for an Americano-style cup.
  • Wash with water only — detergent strips the seasoned coffee oils from the aluminium.
  • Replace the rubber gasket and filter plate yearly; a worn gasket causes weak, uneven extraction.

Frequently asked questions

Aim for roughly 1:10 by brewed yield — about 18 g of coffee and 180 ml of water in a 3-cup pot, 30 g and 300 ml in a 6-cup. The more practical rule: fill the basket level without tamping and the water to the safety valve, then adjust grind to taste.
